There is a very diverse job market for foreigners in Mexico. From resort work that can be anything from a dive instructor to a dietician to opening up your own business.
I currently have American friends working in the real estate market, resort working, construction specialties to web development. And in these specialty fields your income can be comparable to the US and the cost of living can be one tenth.
The minimum wage in Mexico is about 50 pesos per day so you are probably not going to want to be laying tile or digging a ditch.
